I'm racking my brains trying to figure out how to tap into the DPDT slide switch used to alternate to and from the "hot mode" in the TS7.
Would it be enough to make and break the marked connection in the jpg with a normally closed TS jack?

What do you mean "tap into"? You want to replace it with a jack that leads to a footswitch? TRS jacks can at best replace an SPDT switch (three conductors), so I don't think it's possible - it looks like the TS7 is using the entire DPDT switch.
